Two common flavours

Soy sauce and miso are the two most common ramen flavours, and they are the two this class cooks.

Miso in the bowl

Miso is a thick paste of fermented soybeans. In the class it flavours the miso broth, and the bowl is dressed with boiled egg, bean sprouts, green onions and corn.

Soy sauce in the bowl

Soy sauce is salty and full of umami, and it is the base of the other bowl. Chicken, bamboo shoots and green vegetables sit on top of it.

Why toppings stay plain

The broth already has a rich taste, so the toppings are kept mild. A good balance between soup and toppings matters more than piling things on.
